Colston Bassett have been making Stilton in Nottinghamshire for over 100 years - whilst the dairy has grown, Billy Kevan and his team remain focused on retaining traditional methods. They are one of the last Stilton makers to ladle the curd by hand.
This dedication to tradition methods sets Colston Bassett from other stilton’s – the result is a wonderful creamy texture and rich flavour, almost sweet with a deep savoury finish.
